Recipes for your weekend

October 24 is National Food Day, a day which focuses on healthy food and nutrition. Gather the family and try some of these healthy and delicious recipes this weekend!

Cauliflower Fried “Rice”

Ingredients:

  • 1 tsp of olive oil

  • 1 package of riced cauliflower (you can also buy whole cauliflower and chop into small pieces)

  • 1/2 cup frozen peas

  • Non-stick cooking spray

  • 1/2 onion diced

  • 1 tsp grated ginger

  • 1 clove of minced garlic

  • Two eggs, beaten

  • Salt and pepper to taste

  • 1 tsp sesame oil

  • 3 stalks of green onion, chopped

Preparation

  • Add olive oil to large pan. Stir fry peas and cauliflower until peas are no longer frozen.

  • In a separate pan, spray non-stick cooking spray and add onions, ginger and garlic. Stir fry until onions are slightly browned. Add beaten eggs and scramble until eggs are done. Add all ingredients to pan with Cauliflower and peas.

  • Stir fry all ingredients on medium heat until well-combined while adding sesame oil and salt and pepper to taste.

  • Off heat, garnish with green onions and enjoy!

Baked Curry Chicken Wings

Ingredients

  • 16 chicken wings, flats and drums separated

  • 1/2 cup olive oil

  • Curry powder to taste

  • Salt to taste

  • Pepper to taste

Preparation

  • Preheat oven to 375

  • Coat/toss chicken wings in olive oil. Add curry powder, salt and pepper and toss/coat until all wings are seasoned.

  • Bake in preheated oven for 30 minutes, or until desired tenderness. Broil for an additional 2 minutes for a crispier finish.

Sauteed Spicy Kale

Ingredients

  • 2 tbsp olive oil

  • 4 cups of kale

  • 8 oz mushrooms, chopped (optional)

  • 4 cloves of garlic, minced

  • 1 bunch of green onions, chopped

  • 1 jalapeno, seeds removed and chopped

  • Salt and pepper to taste

Preparation

  • In a large pan, heat 1 tbsp of olive oil and add kale.

  • Once kale cooks down, add mushrooms and saute until mushrooms are soft.

  • In a separate pan, heat 1 tbsp of olive oil and saute garlic, green onions and jalapeno until garlic browns. Add contents of this pan to pan with kale and mushrooms.

  • Saute on medium heat and season with salt and pepper to taste until all ingredients are well-combined.
