Recipes for your weekend

We continue to send best wishes to those affected by the current health crisis. While we remain vigilant and continue our efforts to remain under quarantine, here are some of our favorite recipes that may help spice up your meal routine this weekend.

  • Enchilada Casserole

Ingredients

  • 2 tablespoons of olive oil

  • 2 cloves of chopped garlic

  • 1 medium red onion, chopped

  • 2 lbs of ground beef, turkey or chicken

  • salt to taste

  • pepper to taste

  • 12 corn tortillas (this is usually enough for a 2-layer casserole; more may be needed depending on how many layers you wish to have and/or how large your casserole dish is)

  • 2 cans of enchilada sauce

  • 16 oz shredded cheddar cheese (may need more depending on how much cheese you like and how many layers you wish to have)

  • chopped green onions

  • 1 small can of sliced black olives

  • sour cream for garnish

  • 9x13 pan or casserole dish

Preparation

  • Preheat oven to 350 degrees

  • In a large frying pan, heat oil and add garlic and onions. Saute for about 2 minutes.

  • Add ground meat and season with salt and pepper to taste. Saute until meat is fully cooked.

  • In bottom of casserole dish, spread a thin layer of enchilada sauce. Top with enough corn tortillas to cover (may overlap on edges of tortillas; in a 9x13 dish, this is usually 6 standard-size tortillas).

  • Top tortillas with enough ground meat to cover entire layer; evenly pour a layer of enchilada sauce over meat; top with one layer of cheese; and then top with another layer of tortillas; repeat for as many layers as desired.

  • Once finished layering, top with layer of cheese. Bake for 30 minutes in preheated oven.

  • Remove from oven and top with chopped green onions and olives. Let cool for about 20 minutes and then cut into serving squares (if you try to cut before slightly cooled, the serving square may fall apart!). Add a dollop of sour cream to each serving and enjoy!

  • Pineapple Salmon

Ingredients

  • 4 salmon fillets

  • 1 can of sliced pineapple, with juice reserved

  • 1 cup soy sauce

  • 2 tablespoons of brown sugar

  • chopped garlic

  • pepper to taste

  • Sesame oil

  • Sesame seeds

  • chopped green onions

Preparation

  • Combine reserved pineapple juice, soy sauce, brown sugar, garlic, pepper and sesame oil and mix well. Pour over salmon fillets and allow to marinate for at least 1 hour. Make sure fillets are completely covered by marinade.

  • Preheat oven to 375

  • Remove fillets from marinade and place in baking dish sprayed with non-stick cooking oil or lightly oiled. Reserve marinade.

  • Bake for about 10-15 minutes or until salmon flakes easily with fork. Be sure salmon is fully cooked to avoid illness.

  • Remove from oven and baste each fillet with reserved marinade. Sprinkle with sesame seeds.

  • Place under broiler for about 2 minutes or until top is crisped/glazed (be careful not to burn them!).

  • Remove from broiler and top with chopped green onion.

  • Serve with rice and your favorite vegetable (I recommend steamed edamame - yum!)

  • Warm vanilla milk

Ingredients

  • 8 oz milk

  • Vanilla syrup

  • Whipped cream

  • Ground cinnamon (optional)

Instructions

  • Heat milk in the microwave for 60 seconds (depending on your microwave settings, you may need to heat for more or less time until temperature is to your liking). You may also heat milk in a pot on the stove just until the edges begin to slightly bubble.

  • After heating, immediately add vanilla syrup to heated milk and stir thoroughly.

  • Add as much whipped cream as you’d like to the top of the vanilla milk.

  • Sprinkle cinnamon onto whipped cream and enjoy!
