Recipes for your Memorial Day weekend

This Memorial Day weekend, we honor the sacrifices of service members and their families. Here are some recipes to add to your grill as you spend the weekend with loved ones.
Grilled Honey Salmon
Ingredients
6 salmon select fillets
Honey for basting
For the marinade:
1 cup low sodium soy sauce
4 cloves of garlic
2 Tbsp Mirin
2 Tbsp brown sugar
1/2 chopped white onion
Preparation
Place all ingredients for marinade in a blender and blend until smooth.
Pour blended marinade over salmon fillets in a zip lock bag; move fillets around until all are well-coated and place in refrigerator for at least 4 hours.
On outdoor grill, lay foil on grate so the salmon doesn’t fall through. Place salmon on foil and cook for about 6 minutes, turning salmon at half way point of cooking time.
Baste salmon with honey and grill for another 2 minutes or until salmon is cooked through.
Serve with your favorite side salad or rice.
Grilled Pineapple
Ingredients
1 can of pineapple spears or rings with juice reserved
1/2 cup of brown sugar
Cinnamon, to taste
Non-Stick cooking spray
Whipped cream (optional)
Preparation
Combine pineapple spears/rings with reserved juice, brown sugar and cinnamon in a large bowl and stir until well-mixed/coated. Marinate for at least 2 hours.
Spray the pineapple with non-stick cooking spray and place on grill. Cook until a nice glaze forms.
Serve with whipped cream or enjoy as a tasty dessert on its own.
Pineapple Sunset Sparkler
Ingredients
4 oz pineapple juice
Splash of grenadine
3 oz sparkling water or citrus soda if you prefer sweeter
Mint for garnish
Preparation
Add splash of grenadine to serving glass, followed by pineapple juice and sparkling beverage.
Add mint for garnish and toast to a wonderful life.
