Recipes for your weekend

Summer has unofficially started, so what better way to celebrate than to try some of our favorite recipes with loved ones this weekend?

  • Teriyaki Mandarin Pasta Salad

Ingredients

  • 12 oz box of bow tie pasta

  • 1 cup of your favorite teriyaki sauce

  • 15 oz canned mandarin orange slices

  • Half a red onion, cut in half and then thinly sliced

  • 1.5 cups of thinly sliced cooked chicken breast pieces

  • Half a cup of steamed edamame

  • Half a cup of sliced almonds

  • Three green onions, chopped

  • 1 tbsp Sesame seeds for garnish

Preparation

  • Place pasta according to directions on box.

  • Once pasta is finished cooking, rinse with cold water and drain completely.

  • Combine pasta and remaining ingredients (except green onion and sesame seeds) in a large pan or bowl. Mix well.

  • Garnish with sesame seeds and green onions and enjoy!

  • Awesome Tuna Melt

Ingredients

  • 1 can of tuna of your choice (we like albacore)

  • 2 tbsp mayonnaise

  • 1/4 of a red onion, finely chopped

  • 1 clove of garlic, finely chopped

  • Squeeze of juice from one slice of lemon

  • Salt

  • Pepper

  • 1/4 cup of chopped mushrooms

  • Olive oil

  • 2 slices of bread

  • 2 slices of provolone cheese (or cheese of your choice)

Preparation

  • Prepare the tuna salad by mixing tuna, mayonnaise, onion, garlic, lemon juice, salt and pepper. Mix well and set aside.

  • Add a small amount of oil to a pan and saute the mushrooms for about 2 minutes. Remove from pan.

  • Add olive oil to pan and place slices of bread in pan. Once toasted on one side, flip to the other side and add slice of cheese on each piece of bread, followed by cooked mushrooms and tuna salad.

  • Carefully put one side of the sandwich on top of the other and press down to grill further. Once bread is toasted to your liking, remove from pan and serve.

  • The amount of tuna made will make more than one sandwich, so store the rest in the refrigerator for later or enjoy with crackers.

  • Easy Tropical Smoothie

Ingredients

  • 4 oz plain Greek yogurt

  • 4 oz frozen tropical fruit mix (pineapples, bananas, papayas, etc.)

  • 6 oz almond milk

  • 1 tbsp of honey (we also sometimes use 3 tsp of stevia instead)

Preparation

  • Combine all ingredients in a blender and combine until smooth.

  • Add more almond milk for a thinner consistency, or use less for a thicker, ice cream-like texture.

  • Enjoy!
