Recipes for your weekend

And just like that - the weekend is here again! Here are some recipes to keep the summer fun going.
Basil Shrimp (found on allrecipes.com)
Ingredients
2 ½ tablespoons olive oil
¼ cup butter, melted
1 ½ lemons, juiced
3 tablespoons Dijon mustard (such as Grey Poupon Country Mustard™)
½ cup minced fresh basil leaves
3 cloves garlic, minced
1 pinch salt to taste
1 pinch white pepper
3 pounds fresh shrimp, peeled and deveined
4 skewers
Preparation
In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.
Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.
Lightly oil grill grate, and arrange skewers on preheated grill. Cook for 4 minutes, turning once, or until opaque.
Key West Chicken (found on allrecipes.com)
Ingredients
3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves
Preparation
In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
Preheat an outdoor grill for high heat.
Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.
Sparkling Popsicles
Ingredients
Popsicle Mold
Gummy bears
fresh chopped fruit
Clear, lemon-lime flavored soda
Preparation
Fill some popsicle molds with gummy bears and some with fruit (or feel free to mix each in the molds!)
Add soda, and place tops on the molds.
Freeze completely and then enjoy this refreshing treat by the pool.
