Recipes for your weekend: 4th of July Edition

As we kick off Independence Day weekend, our weekend recipe guide is all about marinades! You may be grilling, so use these picks to get your meat, fish and vegetables ready to be devoured.
Asian Chili Marinade (courtesy of olivemagazine.com)
Ingredients
4 tbsp sriracha
a chopped stalk of lemongrass
a grated chunk of ginger
1 tbsp palm sugar
juice of 2 limes
Directions
Mix all ingredients together in a bowl
Best used for salmon or chicken.
Spiced Yogurt Marinade (courtesy of olivemagazine.com)
Ingredients
250ml natural yogurt
a large bunch of coriander
2 chopped garlic cloves
4 green chilies
a small chunk of ginger
2 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1 tsp salt
Directions
Mix all ingredients in a food processor and blend until smooth.
Stir in ground turmeric and salt.
Best used to marinate chicken or lamb.
Chermoula Marinade (courtesy of olivemagazine.com)
Ingredients
juice of a lemon
1 tsp ground cumin
1 tsp smoked paprika
a small bunch of coriander
1 chopped red chili
2 chopped garlic cloves
4-6 tbsp olive oil
Directions
Blend all ingredients in a food processor, adding enough olive oil to make a marinade (about 4-6 tbsp).
Use to marinate firm fish like tuna or salmon, or vegetables, before grilling.
