Recipes for your weekend

This weekend, we celebrate National Blueberry Pancake Day, National Corn Chip Day and National Croissant Day. Try some delicious options from our weekend recipe guide.

Ingredients

  • 3/4 cup milk

  • 2 tablespoons white vinegar

  • 1 cup flour

  • 2 tablespoons sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 egg

  • 2 tablespoons melted butter

  • 1+ cup fresh blueberries

  • more butter for the pan

Directions

  1. Mix the milk and vinegar and let it sit for a minute or two (you’re making “buttermilk” here).

  2. Whisk the dry ingredients together. Whisk the egg, milk, and melted butter into the dry ingredients until just combined.

  3. Heat a nonstick pan over medium heat. Melt a little smear of butter in the pan (essential for giving a yummy golden brown crust).

  4. Pour about 1/3 cup of batter into the hot skillet and spread it flat-like (it will be pretty thick). Arrange a few blueberries on top. Cook until you see little bubbles on top and the edges starting to firm up. Flip and cook for another 1-2 minutes until the pancakes are sky-high fluffy and cooked through.

  5. Serve with butter and maple syrup.

Ingredients

  • 2 pkg. (9-3/4 ounces each) corn chips, divided

  • 2 cups semisweet chocolate chips, divided

  • 1 cup sugar

  • 1 cup light corn syrup

  • 1 cup creamy peanut butter

Directions

  1. Spread 1 package of corn chips on the bottom of a greased 13x9-in. baking pan; sprinkle 1 cup chocolate chips over the top.

  2. In a large heavy saucepan, combine sugar and corn syrup. Bring to a boil; cook and stir 1 minute. Remove from heat; stir in peanut butter. Pour half of the peanut butter mixture over chip mixture. Top with remaining corn chips and chocolate chips; drizzle with remaining peanut butter mixture. Let stand until set. Cut into bars.

Ingredients

  • 4 butter croissants

  • 4 oz whipped cream cheese

  • 8 slices swiss cheese

  • 3/4 lb black forest ham

  • 1/4 cup raspberry jam

  • powdered sugar for dusting

  • Reynolds Wrap Aluminum Foil for wrapping

Directions

  1. Preheat oven to 400° F.

  2. Slice each croissant in half. Spread the inside of the bottom half of the croissant with 1 oz cream cheese. Top with one slice of swiss cheese, then one fourth of the ham and top with another slice of swiss cheese. Repeat for all 4 sandwiches.

  3. Wrap each sandwich in Reynolds wrap aluminum foil and place on a baking sheet.

  4. Bake for 10 minutes until the cheese is melted and the ham is heated through.

  5. Serve dusted with powdered sugar and dipped in raspberry jam.
