Thanksgiving Leftover Wontons (found on Allrecipes.com)
Ingredients:
¾ cup lemon juice
1 cup dried cranberries
1 ½ cups shredded cooked turkey
1 cup prepared stuffing
4 ounces cream cheese, softened
¼ cup thick turkey gravy
1 (14 ounce) package wonton wrappers
1 pinch salt to taste
3 cups canola oil for frying
2 tablespoons minced onion
1 tablespoon lime juice
1 teaspoon seeded and minced jalapeno pepper - or to taste
1 teaspoon minced garlic
1 teaspoon water
Preparation
Pour the lemon juice over the dried cranberries in a bowl; set aside. Mix the turkey, stuffing, cream cheese, and turkey gravy in a separate bowl until thoroughly combined.
Place a wonton wrapper on a work surface; spoon about 1 tablespoon of the filling in the center of the wrapper. Moisten two opposite edges of the wrapper with a finger dipped in water, fold the wrapper in half the long way, and press the edges together with a fork. Sprinkle the wrapper with salt. Repeat with remaining filling and wrappers.
Heat the canola oil in a large, deep skillet over medium heat; pan-fry the filled wontons in batches until crisp and golden brown, about 2 minutes per side. Drain the fried wontons on paper towels; allow to cool for about 5 minutes to set the filling.
Drain the lemon juice from the dried cranberries. Place cranberries into a food processor; pulse several times until the cranberries are finely chopped. Transfer to a bowl and mix in the onion, lime juice, jalapeno pepper, garlic, and water. Serve with the hot fried wontons.
Thanksgiving Leftover Pizza (found on Allrecipes.com)
Ingredients
1 pound pizza dough
2 tablespoons olive oil, divided
1 ½ cups sliced fresh mushrooms
2 teaspoons minced garlic
1 ½ cups turkey gravy
2 cups chopped cooked turkey
1 ½ cups mashed potatoes
2 cups shredded mozzarella cheese
¼ cup chopped fresh parsley
½ teaspoon garlic powder
¼ teaspoon garlic salt
Preparation
Preheat oven to 450 degrees F (230 degrees C). Grease or flour a pizza pan.
Roll dough onto the prepared pizza pan.
Heat 1 1/2 tablespoons olive oil in a skillet over medium-low heat; cook and stir mushrooms and garlic until mushrooms are tender, 5 to 10 minutes.
Spread gravy over pizza dough; top with mushroom mixture, turkey, and spoonfuls of mashed potatoes. Sprinkle mozzarella cheese and parsley over pizza.
Whisk remaining 1/2 tablespoon olive oil with garlic powder and garlic salt; brush over pizza crust.
Bake in the preheated oven until dough is cooked and cheese is melted, 12 to 15 minutes. Cool slightly before serving, 3 to 5 minutes.
Country House Bed and Breakfast Casserole (found on Allrecipes.com)
Ingredients
¼ cup butter
½ cup croutons
½ cup shredded Cheddar cheese
4 large eggs eggs
¾ cup milk
1 teaspoon dry mustard
1 cup cooked ham, cubed
Preparation
Melt butter in an 8x8 inch glass baking dish or small casserole dish. Add croutons and toss to coat. Sprinkle cheese on top of croutons. In a large bowl, beat together eggs, milk and dry mustard. Pour egg mixture over croutons and cheese. Sprinkle on cubed ham. Cover with plastic wrap, and refrigerate overnight.
Preheat oven to 375 degrees F (190 degrees C). Let casserole stand at room temperature while oven heats.
Bake in preheated oven for 40 minutes, until eggs are set. Let sit for 5 minutes before cutting. Can also be frozen and microwaved later.
