We continue to send best wishes to those affected by the current health crisis. While we remain vigilant and continue our efforts to remain under quarantine, here are some of our favorite recipes that may help spice up your meal routine this weekend.

  • Crispy Brussels Sprouts

Ingredients

  • As many Brussels sprouts as you desire, each piece cut in half

  • Peanut oil (you may also use vegetable oil, but peanut is preferred)

  • Salt to taste

Preparation

  • In a large pot, pour enough oil to create a pool in which you can deep fry the Brussels sprouts

  • Fry the sprouts until golden brown

  • Remove sprouts from oil and place on paper towel-lined plate

  • Season sprouts with salt to taste

  • Easy Stir-Fried Ramen Noodles

Ingredients

  • 2 tbsp of vegetable oil

  • 1/4 of an onion, chopped

  • 1 clove of garlic, minced

  • 1/2 cup of mushrooms, chopped

  • 4 Brussels sprouts, each piece cut into quarters

  • Cooked chicken, shrimp or other protein of your choice (optional)

  • 2 packs of ramen noodles of your choice with seasoning packets

  • Sesame oil

Preparation

  • Boil packs of ramen noodles just until you can break the noodles apart with a fork (it is important not to overcook the noodles so that they are not “mushy”). Reserve the packs of seasoning that come with the noodles. Drain cooked noodles and rinse immediately with cold water.

  • In a large pan, heat vegetable oil.

  • Add onion and garlic, and saute for approximately 3 minutes. Add mushrooms and Brussels sprouts and saute about 5 minutes more.

  • Once vegetables are cooked to your preference, add protein to heat and stir with vegetables.

  • Add cooked noodles along with a dash of sesame oil and the reserved seasoning packets. Stir so that seasoning and oil coat the vegetables, protein and noodles.

  • If you have any sesame seeds, sprinkle some on top of each serving and enjoy!

  • Warm caramel apple cider

Ingredients

  • 8 oz apple juice or cider

  • Whipped cream

  • Caramel

Instructions

  • Heat apple juice in the microwave for 45 seconds (depending on your microwave settings, you may need to heat for more or less time until temperature is to your liking)

  • Add as much whipped cream as you’d like to the top of the warm apple juice

  • Drizzle the whipped cream with caramel and enjoy!

Best wishes for a great weekend!
