National Bagel Day kicks off your Martin Luther King, Jr. holiday weekend, and we have some easy, yummy recipes for you to try.

  • Everything Avocado Turkey Bagel Sandwich (courtesy of cakenknife.com)

Ingredients

  • 2 wholes Everything Bagel, halved

  • 6 slices Deli Turkey Breast, thick-cut (get creative with flavors if you want!)

  • 1 cup Cherry Tomatoes

  • 6 ounces Cream Cheese, room temperature

  • 1 tablespoon Adobo Sauce

  • 2 Chipotle Peppers, chopped (plus more for serving, if desired, for added heat)

  • 1 large Avocado, mashed

  • 1 teaspoon Lime Juice

  • 1/2 teaspoon Black Pepper

  • 1/2 teaspoon Salt

  • 2/3 cup Mixed Greens

Directions

  1. Preheat oven to 400˚F. Grease a rimmed baking sheet with cooking spray.

  2. Add cherry tomatoes in an even layer to the prepared baking sheet. Roast tomatoes until they begin to burst, about 10 minutes, turning halfway through cooking.

  3. While the tomatoes are roasting, make the chipotle cream cheese. In a small bowl, stir together cream cheese, adobo sauce, and 2 chopped chipotle peppers until combined. Set aside until ready to use.

  4. In a small bowl, stir together mashed avocado, lime juice, black pepper, and salt.

  5. Toast the bagel halves until golden brown.

  6. To assemble, spread the bottom halves of the toasted bagels with mashed avocado mixture, dividing evenly between the two.

  7. Divide the cream cheese evenly between the two top halves of the bagels, spreading evenly.

  8. Add turkey to the bottom halves of the bagels and top with mixed greens and burst cherry tomatoes. If desired, top with additional chopped chipotle peppers.

  9. Finish with the top halves of the bagels. Serve immediately.

Ingredients

  • 4 oz cream cheese

  • 1/3 cup fresh dill, chopped

  • 1/4 teaspoon salt

  • 1/4 teaspoon garlic powder

  • 1 tablespoon sour cream

  • 4 everything bagels

  • 1 cucumber, sliced

  • cherry tomatoes, sliced

  • 1 avocado, sliced

Directions

  1. Combine cream cheese, dill, salt, garlic powder, and sour cream in a bowl

  2. Beat with a mixer or use a rubber spatula to combine

  3. Toast bagels and spread the garlic dill cream cheese on both sides

  4. Top with sliced cucumber, cherry tomatoes, and avocado

  • Roasted Red Pepper Pesto Chicken Bagel Sandwich (courtesy of wholeandheavenlyoven.com)

Ingredients

  • 2 plain bagels, split and toasted

  • 1/4 cup prepared pesto

  • 1/2 cup fresh baby spinach

  • 1 medium cooked chicken breast, thinly sliced

  • 1/4 cup jarred roasted red peppers

  • 1/2 cup shredded mozzarella cheese

  • 1/2 teaspoon garlic salt

  • 1/2 teaspoon ground pepper

Directions

  1. Spread pesto evenly between one split half of each toasted bagel. Top with spinach, sliced chicken, roasted red peppers and mozzarella cheese. Sprinkle each with garlic salt and pepper.

  2. Place bagel halves under broiler and broil at high heat 2-3 minutes or until cheese is melted and bubbly. Remove from oven and top each with remaining bagel halves to form a sandwich. Serve immediately and enjoy!
