Saturday is National Picnic Day and what a beautiful day to celebrate. Pack your basket with these easy, travel-friendly recipes from our weekend guide.
Cream Cheese Tortilla Bites (courtesy of iamhomesteader.com)
Ingredients
6 medium (8 inches) tortillas
8 ounces cream cheese, room temperature
2 tablespoons everything seasoning, divided
2 tablespoons butter
Directions
Divided equally, spread the cream cheese evenly over the tops of the tortillas.
Sprinkle each with 1 teaspoon everything seasoning, roll up, and cut into 1-inch bites. (I cut off the ends and cut the remaining into 6 pieces for a total of 36 bites.)
In a large frying pan, melt butter over medium heat. Add the bites (cut side down) and cook for 1-2 minutes or until golden brown. Flip and repeat with the opposite side.
Serve warm.
Chicken Salad Sandwich (courtesy of iwashyoudry.com)
Ingredients
3 cups shredded rotisserie chicken
2 stalks celery, chopped
1 cup firm red grapes, halved
1/2 cup sliced almonds
For the Dressing:
1/2 cup mayo
1/4 cup plain greek yogurt
1 tbsp lemon juice
1 tsp garlic salt
1/2 tsp salt
1/4 tsp black pepper
For the Sandwich:
6 large croissants
green leaf lettuce
Directions
Combine the chicken, celery, grapes and almonds in a large bowl.
In a separate bowl whisk together the ingredients for the dressing until smooth. Pour the dressing into the bowl with the chicken and stir to coat.
To serve the sandwich, cut the croissants in half and place a leaf of lettuce on the bottom half. Top with the chicken salad mixture and place the top half of the croissant on top. Enjoy!
Fruit and Cheese Kabobs (courtesy of mybakingaddiction.com)
Ingredients
8 Sargento® Reduced Fat Colby-Jack Cheese Snacks
24 green seedless grapes
24 small strawberries
4 oz. low fat vanilla yogurt
honey (optional)
Directions
Cut each cheese snack crosswise into 3 pieces. Alternate on skewers with grapes and strawberries.
Drizzle honey over the vanilla yogurt and serve as dip for kabobs.
