Aside from being a good source of fiber, mangos are delicious! So let’s celebrate them on National Mango Day with our weekend recipe guide.
Fresh Mango Salsa (courtesy of cookieandkate.com)
Ingredients
3 ripe mangos, diced (see photos)
1 medium red bell pepper, chopped
½ cup chopped red onion
¼ cup packed fresh cilantro leaves, chopped
1 jalapeño, seeded and minced
1 large lime, juiced (about ¼ cup lime juice)
⅛ to ¼ teaspoon salt, to taste
Directions
In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime.
Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For best flavor, let the salsa rest for 10 minutes or longer.
Mango Rice Pudding (courtesy of tasteofhome.com)
Ingredients
2 cups water
1/4 teaspoon salt
1 cup uncooked long grain brown rice
1 medium ripe mango
1 cup vanilla soy milk
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
Chopped peeled mango, optional
Directions
In a large heavy saucepan, bring water and salt to a boil; stir in rice. Reduce heat; simmer, covered, 35-40 minutes or until water is absorbed and rice is tender.
Meanwhile, peel, seed and slice mango. Mash mango with a potato masher or fork.
Stir milk, sugar, cinnamon and mashed mango into rice. Cook, uncovered, on low 10-15 minutes longer or until liquid is almost absorbed, stirring occasionally.
Remove from heat; stir in vanilla. Serve warm or cold, with chopped mango if desired.

Ingredients
1 cup creamy cashew butter (can cub almond butter)
1 cup oat flour
1 large egg
½ cup maple syrup
1 tsp vanilla extract
¼ tsp fine sea salt
½ tsp baking soda
½ cup mango, diced small
Directions
Preheat oven to 350F. Spray an 8x8inch baking dish with cooking spray and line with parchment paper.
In a large mixing bowl, stir together the cashew butter, oat flour, egg, maple syrup, vanilla, salt, and baking soda until combined. Gently fold in mango.
Use a rubber spatula to spoon batter into lined baking dish. It will be thick.
Bake for about 28 minutes. Cool pan on a cooling rack for 30 minutes before carefully removing blondies from pan to cool completely.
